Keeping food above or below “danger zone” temperatures will avoid foodborne illness.
U.S. Department of Agriculture’s (USDA) Food Safety and Inspection Service (FSIS) released guidelines to keep Super Bowl parties free of foodborne illness. The agency recommended putting perishable foods out in stages, some during the first half and then others for the second half.
“One of the biggest threats to a successful game day meal is bacteria that causes foodborne illness,” said USDA FSIS Administrator Denise Eblen. “Make sure that takeout or delivered food is quickly refrigerated or placed in an oven until your guests arrive.”
The so-called “danger zone“ for perishable foods is between 40º and 140º. The agency stated that traditional party fare such as pizza, wings, and burgers should not be kept at room temperature for more than two hours to avoid the multiplication of bacteria.
